DIY Chia Seed Pudding Bar

Is it just me, or is brunch getting healthier these days? French toast has been replaced by avocado toast. Floury banana pancakes are now just banana and egg “pancakes”. I don’t think these trendy foods are going anywhere anytime soon, so I was inspired to design a chia seed pudding bar! It’s so easy to prep in advance and #fitfam approved.


Whenever I have a chance to add a DIY element to food or drink, I almost always go with it! From taco bars to build-your-own crostini stations, there are so many ways to make food more interactive and engaging. Our chia seed pudding bar is just another way to let your friends join the party *and* take the pressure off you. Chances are, they’ll want to snap a photo of their creative work of edible art!

The Game Plan

The day (or night) before

Make the chia pudding. Add these ingredients to a large bowl:

  • 4 cups unsweetened almond milk
  • 1 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Whisk aggressively then cover with plastic wrap. Chill in the refrigerator for at least 3 hours, preferably overnight.

Remove from fridge and add 2 tablespoons honey or agave (optional). Stir to blend. The pudding should be a thick consistency.

P.S. This serves 4 people. If you’re hosting a larger group, then double the recipe.

Buy your toppings: Get creative! Choose fruit that’s in season; it’ll be cheaper and better tasting. (Psst! Here are tips to shop your farmers market.) Also explore the bulk bins at your grocery store for granola, nuts, coconut flakes, dried fruit, and more.

The morning of your brunch

Prep the toppings: Wash and cut the fruit, then place all of the toppings in small bowls.

Cherry pits? Press a metal pastry tip down the cherry’s center. The pit will slide right out!

Don’t forget the drinks. Brew some coffee and/or boil water for tea. Perhaps you can balance out these healthy chia bowls with boozy mimosas?

More to the menu? If you want to serve more food for brunch, consider eggs (soft-boiled, poached, or scrambled), sliced avocado, and toast. I didn’t say avocado toast, but I certainly wouldn’t be against it. 😉
