When you’re buying tortillas at the grocery store, they typically come in packs of 8 to 12 at the smallest. And if you can’t manage to throw a weeknight taco party, you’ll inevitably end up with extra tortillas when cooking up our Cumin Flank Steak Tacos. So what to do with those leftover tortillas?
We’ve come up with six ways to enjoy your extra tortillas — you’ll quickly forget that they were ever considered leftovers.
Tortilla chips: Simply cut (or use your hands to tear!) tortillas into chip-sizes. Pan fry over medium heat in olive or vegetable oil for about 3 minutes on each side, or until golden. Sprinkle with salt and serve with salsa or guac. For some next-level goodness, dip them into your favorite hummus.
Huevos rancheros: Fry a few eggs and serve them on warm tortillas. Spoon salsa over the eggs, add sliced avocado, and you’ll be enjoying the breakfast of champions in no time.
Migas: Tear the tortillas into roughly half-inch squares. Toss them in a pan with sautéed onions. Beat a couple eggs, scramble them with the tortillas and onions in the pan, and sprinkle grated cheese (whatever you have on-hand!) If you’re feeling fancy, top with chopped cilantro and salsa.
Churro chips: For a sweet afternoon or post-dinner treat, brush the tortillas with butter and sprinkle with cinnamon and sugar. Tear them into bite-size pieces and spread on a baking sheet. Bake them in the oven at 400 degrees F for about 10 minutes or until golden.
Quesadillas: For an easy late-night snack, sprinkle (or pile!) shredded cheese between two tortillas. Simply butter a pan and cook the quesadilla over medium heat. After a few minutes, flip it over and cook until the cheese is melty and both sides are golden.
Freeze ’em: If you can’t seem to find the time to use the leftover tortillas right away, pop them into a sealed plastic bag and place in the freezer for up to a month. For flour tortillas, we recommend putting a piece of wax paper or aluminum foil between each tortilla so they don’t stick together. When you’re ready to use them, warm each tortilla, one at a time, in a pan over low heat.
